Just random breakfast porn. :)

Breakfast: 1/2 a serving of leftover frittata topped with salsa, plus 1/2 c oatmeal with 1/2 a chopped apple mixed in. I microwaved the apple pieces with cinnamon for about a minute and a half before adding them.

I was feeling fairly motivated at breakfast time earlier so I followed a recipe (more like a suggestion/list of instructions) from one of my Tosca Reno books on making a healthy frittata from leftovers.

I sautéed some leftover stir-fry veggies and chicken from the other night in a pan until they were warm… The recipe also suggested adding a cooked leftover starch like brown rice, which I had, so I decided to try that…. Then I added six egg whites and a whole egg, let the whole thing cook for about three minutes until the eggs started to set, and then put the pan under the broiler for three minutes to finish.

I ate half of the finished product with salsa.

For a PWO meal I had a protein pancake (1/2 banana, 2 egg whites, scoop of vanilla whey, 2 TB along milk, 1 TB chia seeds) topped with 1 TB agave syrup…. I let too much time elapse before I had this though because I was way too hungry.

I made this as a breakfast to go while I ran a bunch of early errands but then I dropped half of it, oops. 

Anyways, I’m gonna post a full day of food again since I’ve kind of been subsisting on five things and need to get some more variety in.

Breakfast is another Eat Clean idea… It’s oatmeal and oat bran cooked with a little protein powder and almond milk, topped with half a diced mango, flaxseed, a TB of unsweetened coconut flakes, and some chopped almonds

I made a liquid breakfast inspired by one of Tosca Reno’s Clean Eating Diet books. (Disclaimer: these are really NOT diet books — they admonish against counting calories, and they are full of really great, healthy recipes.)

Anyways this was a scoop of vanilla whey, a cup of unsweetened vanilla almond milk, 1/2 c dry oats, 1 TB natural peanut butter, and a little cinnamon, blended with ice. Not bad if you like to chew your shakes.
