I was feeling fairly motivated at breakfast time earlier so I followed a recipe (more like a suggestion/list of instructions) from one of my Tosca Reno books on making a healthy frittata from leftovers.
I sautéed some leftover stir-fry veggies and chicken from the other night in a pan until they were warm… The recipe also suggested adding a cooked leftover starch like brown rice, which I had, so I decided to try that…. Then I added six egg whites and a whole egg, let the whole thing cook for about three minutes until the eggs started to set, and then put the pan under the broiler for three minutes to finish.
I ate half of the finished product with salsa.
I made a liquid breakfast inspired by one of Tosca Reno’s Clean Eating Diet books. (Disclaimer: these are really NOT diet books — they admonish against counting calories, and they are full of really great, healthy recipes.)
Anyways this was a scoop of vanilla whey, a cup of unsweetened vanilla almond milk, 1/2 c dry oats, 1 TB natural peanut butter, and a little cinnamon, blended with ice. Not bad if you like to chew your shakes.
Just trying to stay healthy, fit, and sane in a world that is often none of these.
