Just random breakfast porn. :)

Breakfast: 1/2 a serving of leftover frittata topped with salsa, plus 1/2 c oatmeal with 1/2 a chopped apple mixed in. I microwaved the apple pieces with cinnamon for about a minute and a half before adding them.

Dinner: honey-mustard baked salmon (equal parts honey and mustard brushed over a filet, baked at 450 F for about 12 minutes), brown rice, and a sad salad with vinaigrette. I need to make a late-night grocery run for some more green vegetables.

I was feeling fairly motivated at breakfast time earlier so I followed a recipe (more like a suggestion/list of instructions) from one of my Tosca Reno books on making a healthy frittata from leftovers.

I sautéed some leftover stir-fry veggies and chicken from the other night in a pan until they were warm… The recipe also suggested adding a cooked leftover starch like brown rice, which I had, so I decided to try that…. Then I added six egg whites and a whole egg, let the whole thing cook for about three minutes until the eggs started to set, and then put the pan under the broiler for three minutes to finish.

I ate half of the finished product with salsa.

Insanely early dinner because I’ve got to leave for the theater soon: baked lemon pepper tilapia, sweet potato with cinnamon, and steamed green beans tossed with olive oil. Feeling back on track and even-keeled again!

Fear foods galore here (chips, mayonnaise, sandwich bread!) but I did enjoy half of this lobster roll :)

Dinner was part of a steak I brought home yesterday with some of the rosemary I posted earlier; maple- and thyme-roasted carrot ribbons from the blog Katie Did; and steamed green beans tossed with olive oil, salt, pepper, and lemon juice… I need to get the hang of cooking grass-fed beef. It’s really easy to overdo.

I’ve got a layover but my first flight arrived late, so this hastily grabbed salad is going to be dinner on my second flight, minus the fried thingies. I should have brought food with me but I was weighed down by so much extra stuff already I didn’t wanna deal.
