I made a stir-fry for dinner with chicken breast, zucchini, green beans, and a bunch of seasonings/oils including sesame oil, chili paste, tamari, rice wine vinegar, ginger, garlic, salt and pepper, and black and white sesame seeds…. But, unfortunately as soon as I sat down I realized I *completely* ruined my appetite taste-testing during baking, so I’m going to save this for later.
For dinner, I dusted off the slow-cooker to try to cook up a grass-fed chuck roast I brought home from Tennessee. I added a bunch of chopped tomatoes, onions, tomato paste, red wine, some spices like cumin and bay leaves, and let the whole thing cook for four hours.
Everything that comes out of a slow-cooker kind of always looks like stew or slop but, I’m going to keep using it (or my Sous Vide Supreme!) for all this pastured meat to get it tender.
Then on the side I had some steamed green beans again because I’m trying to get through a big batch I bought before it goes bad.
Just trying to stay healthy, fit, and sane in a world that is often none of these.
